How do you pick vegetables at a u-pick farm? A ripeness guide for beans, peppers, squash and more

Updated Nov 2026 Β· 3 min read Β· By the U-Pick Near team

Quick answer

Short version: most vegetables taste best picked young and tender. Snap beans before the seeds bulge, cucumbers before they yellow, zucchini at 4 to 8 inches, peppers when full sized and firm, tomatoes when fully colored. Cut rather than pull when a stem is tough, and keep everything cool on the way home.

How do you know a vegetable is ready to pick?

Nebraska Extension's harvest guide gives a simple test for each crop:

  • Snap beans: before pods are full sized, while seeds are small and tender.
  • Peas: pods plump and green, before the peas are fully developed.
  • Cucumbers: bright dark green, 7 to 9 inches for slicing; never yellow.
  • Summer squash and zucchini: young, 4 to 8 inches long, soft enough that a fingernail pierces the skin.
  • Peppers: full sized and firm. Left on two to three more weeks, green peppers turn red, yellow or orange.
  • Tomatoes: fully colored and firm.
  • Sweet corn: silks dry and brown, kernels milky.

How should you pick without hurting the plants?

Nebraska Extension suggests cutting rather than tearing when a stem is tough, and harvesting when the leaves are dry so disease does not spread. Snips help with peppers, eggplant and squash. Follow the farm's rows and ask which beds are open that day.

When is vegetable picking season?

Most vegetable picking runs Jun to Oct. Peas and early beans come first, then cucumbers and squash, then tomatoes, peppers and sweet corn in late summer. See sweet corn and tomato season.
